Recipe for

Fried rice

Ingredients

  • 100g or so of cold leftover rice per portion – see notes
  • 1 egg
  • 3 spring onions
  • 2 garlic cloves
  • Chinese cabbage or something similar if you have it
  • 1 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp shaoxing rice wine
  • Optional: throw in some leftover chicken or prawns or carrot or broccoli, basically anything you want to add.
  • salt and pepper to taste

Steps

  1. Prepare all your things: slice spring onions and separate green from white, crush garlic, julienne, chop, chifonade whatever it is you're adding
  2. Mix sauces
  3. Heat your wok up until it's smoking like yer nan
  4. Add oil and get that smokey hot
  5. Add whites of spring onions and fry for a few mins
  6. Add whatever veg/protein you're using
  7. Add garlic and fry for a few minutes
  8. Add rice and keep frying
  9. Tip in whisked egg
  10. Add sauces
  11. Keep going
  12. Keep going
  13. A little longer
  14. Serve

Tips

  • You can't really make this with freshly cooked rice, I mean you can if you want, but it wont feel right
  • The key to good fried rice is heat, you want a super hot wok
  • Try to caramelise the soy sauce a little
  • Tip the pan and scramble the egg to one side to avoid a soggy mess
  • If you want this to taste like it does from a takeaway, then add a punch of MSG. It isn't bad for you. Don't be racist.
