I made a vegan version of this and the ingredients are almost identical, except for the fact that it's fish. And not melon.
I wont bother writing it all out again, just go and read that one.
Obviously just follow the ingredients and steps of the vegan version.
The fish needs to be ultra-fresh and "sashimi grade". Technically that doesn't mean anything and it's not regulated but generally means that it was frozen or chilled as soon as it was caught and treated properly and safely since then.
