Homemade bagels with smoked salmon and cream cheese

Ingredients

  • 6g active dry yeast
  • 19g sugar (I used golden caster sugar)
  • 300ml warm water
  • 400g bread flour or high gluten flour
  • 6g salt

Bread is fucking annoying. It depends on how soggy your air is, so although I say 300ml of water, add it to your dough a little at a time and don't be afraid to not use the last few ml. Seems silly. Is important.

Steps

  1. Pour about 1/3 of the water into a mug and add the yeast and sugar, let it sit for a few mins before stirring it. Poor yeastie just needs a lil tine to awaken from it's slumber
  2. Put flour and salt into a bowl and mixy mixy
  3. Make a well in the middle of the flour then add your warm sugary yeast mix.
  4. Stir it all up and slowly add the rest of your water bit by bit until you've got a moist but firm dough.
  5. As above, don't be afraid to leave the smallest amount of water out of the dough. It's easier to not add the water than it is to make up with flour. (because you can't)
  6. Kneed dough on a floured countertop for about 10 minutes, it's hard work but you'll see the dough go from a scraggly mess to a smooth dough-like-dough-ball.
  7. Put in a mixing bowl and cover with a warm damp tea towel or clingfilm and let it rise in a warm place until about double in size.
  8. When doubled, smoosh the dough down.
  9. Leave again for another 10-20 minutes until it starts to rise again.
  10. At this point you can split the dough into balls, this will make 8 small bagels or 6 larger ones.
  11. Try to keep them roughly the same size.
  12. Form into balls, by being careful not to crush or squish them too much
  13. To make the bagel shape, poke a hole in each ball then slowly stretch each one out so it looks like a saggy bagel
  14. Rest for another 10-20 minutes
  15. Bring a big pan of water to a boil and lower each bagel in, they should float to the top.
  16. Boil for a minute then flip, boil for another minute
  17. Remove and add to a baking tray wither oiled all nice and good or layered with baking paper
  18. Do this in batches if you need to
  19. Heat oven to 180c then bake bagels for about 20 mins

Tips

  • Baking break is shit, if it doesn't work, just try it again.
  • Add bagel toppings (sesame seeds, poppy seeds etc) after they've been boiled and before they go into the oven
  • Nigella seeds are an ace toppig
  • Slice and toast naked side before using for extra tasty
