Recipe for

Sichuan aubergine

Ingredients

  • 1 large aubergine – cut into batons
  • 2 tsp salt
  • 1 green pepper – cut into quarters
  • 1 red onion – sliced
  • 2 tbsp light soy sauce
  • 2 tbsp shaoxing rice wine
  • 2 tsp sugar
  • 1 tsp dark soy sauce
  • 3 tsp cornstarch
  • 4 cloves garlic – crushed
  • 2 red chillies – sliced

Steps

  1. Toss cut aubergine in salt and set aside for 20 minutes or so, it'll draw out some moisture and make it softer when cooked
  2. Combine soy sauces, rice wine, sugar and 1 tsp of corn starch
  3. Prepare the rest of your ingredients
  4. When aubergine is ready, rinse it and dry on paper towels
  5. Toss abergine in remaining cornstarch
  6. Heat wok until smoking
  7. Add oil and when smoking hot fry your aubergine
  8. Remove
  9. Fry the rest of you vegetables
  10. Add aubergine
  11. Add garlic and chillies
  12. Stir fry for a few minutes
  13. Add sauce
  14. Stir fry until thick and sticky
  15. Service with steaming hot rice
