Recipe for

Simple stir fried noodles and vegetables

Ingredients

  • Rice noodles – enough for whatever amount of people
  • An assortment of vegetables
  • 1 tbsp light soy sauce
  • 1 tsp of black vinegar
  • 1 tsp of chilli oil
  • Optional: 1 tbsp of peanut butter – see notes
  • Egg
  • Optional: spring onion, Sichuan pepper

Steps

  1. Cook your noodles for 1 minute less than the packet suggests
  2. Rinse with cold water and plunge into a bowl of more of the cold stuff
  3. Mix your soy sauce, vinegar and chilli oil together in a little bowl or whatever. If you're me and made it weird, stick some peanut butter in there
  4. Start frying your eggs on a medium heat
  5. Heat your wok (get a real one, I've said it before) til it's smoking
  6. Add some veg oil until it to lights up some Benny H's
  7. Chuck vegetables in – see notes
  8. Stir fry until stirred and fried
  9. Add noddles and give them the same treatment
  10. Add sauce and you get the idea
  11. When it's all said and done, dish out into bowls or plates or bare hands, I don't give a fuck
  12. Put egg on top
  13. Grind sichuan pepper on top
  14. Get noodley

Tips

  • I made this with salad dressing because I'm stupid, but it was delicious
  • Here are some vegetables that are good: beansprouts, broccoli, cabbage, carrot
  • When you add your vegetables just let them sit there for a minute or so, they'll char., burn even, but you will appreciate it. You're not Ken Hom, stop pretending.
  • Do the same with your noodles.
