What to do with an aubergine!
Pasta was the original idea, but it wasn't going to cut it. Instead we opt for spicy sticky Chinese style aubergine.
It isn't a particularly pretty dish and frustratingly I just cannot find the recipe I have made many times over. I attempted to make it up... it turned out ok.
