Overnight oats.
I feel like I've found a cheat code for tasty, healthy, filling, satisfying lunches. The modular salad. I don't know when why or how I cracked it but until the upheaval of FESTIVUS it was the go-to weekday lunch. The aim was something that had the right, or near enough, nutritional value to fuel us through the day and power any workout.
I am susceptible to the post-lunch slump. Something about simple carbs just put me in a coma. Even just two slices of bread sandwiching a sandwich is enough to knock me out.
So the modular salad comes in the form of a healthy grain (almost always pearl barley), broccoli or something similar charred, most likely cottage cheese and then some fresh salad type vegetables. Almost always tomato and cucumber for ease. If I'm feeling it, then a dressing.
It's not the perfect balance but it's pretty much near it.
Tonight I caught up with a good friend. We haven't seen each other since a pre-christmas Die Hard viewing. He's training for a marathon and I haven't exercised consistently since December.
But we settled our differences over about 4 or 5 guinesses and a pub burger.
I am very VERY particular about burgers. Not out of wankiness, but of flat out disappointment at the trash we pay £10+ for these days. Frankly it is almost always an insult.
This was a decent burger. Not fancy. Not messed around with. Cooked and served. I'll take it.
