Mondays, usually, can get in the fucking sea. When it is the day after a Sunday roast, though, it is an exciting one.
I had other things I wanted to do today so naturally I didn't do them in favourite of making sausages and simmering some stock in preparation for some pho ga. More on that in a bit.
Overnight oats. I should find a way to build a counter into this.
Today I made sausages and ended up testing the mix a few times. So lunch wasn't really lunch at all. It was sausage filling in various states of seasoning and a wayward banana at some point.
Right. Here we go lads. The one and only. Pho.
When I lived in Manchester I frequented I Am Pho religiously. Once upon a time they had a £5 pho deal, which in today's economy feels like absolute madness. It didn't last.
They were my first foray into pho and remained a firm favourite until I left. Their brand of clean, fragrant, fresh broth with bouncy but not rubbery noodles and fresh herbs is everything you want it to be.
So today I attempted my own. It was ok, 7/10. But the good news is I know exactly how to improve it. Behold, recipe below.
